Integrated course unit module: Processed Food

Learning objectives

The main objective of this course is to introduce students to the processes used for the production of finished products of animal origin.
In particular, the student should be able to:
1. know the main processing phases for the production of products of animal origin.
2. be able to independently evaluate data and information by choosing the most appropriate ones to formulate answers to simple problems in the reference sectors.
3. Be able to communicate the knowledge learned relating to the processing of raw materials of animal origin to other people who are experts or not experts in the sector, and when starting work, to superiors and/or customers.
4. connect the different topics covered among themselves and with basic and similar disciplines and have acquired the cultural tools and the foundations to undertake work activity at the end of studies

Prerequisites

Composition and quality features of raw materials knowledge is required.

Course unit content

Processed products from animal origin: dairy products such as cheese, yogurt, fats, powders, meat products, eggs and egg products, cheese and meet analogues plant-based.

Oral exam covering the entire program, with an initial phase in which the student proposes a topic of his/her choice.
