Learning objectives

The ability to interpret the effect of nutrients/foods/diets on human physiology and metabolism under healthy conditions.
The ability to understand the mechanisms related to the recognition and control of food intake.
The ability to understand the nutritional quality of nutrients.

Course unit content

The course is divided into the following parts: Morphology and functions of the gastrointestinal tract; Macronutrients; Micronutrients; Other nutrients and compounds; Food groups;

Full programme

Description of the physiology gastrointestinal tract and accessory glands; digestion and absorption of nutrients; the concepts of bioavailability and essentiality of nutrients; nutritional quality macronutrients; micronutrients; other nutrients/compounds of nutritional interest; metabolic regulation during the fasting and postprandial phases; mechanisms of hunger and satiety regulation; concepts of balanced diet and food groups.

Teaching methods

The educational content will be carried out through classroom lectures and seminars, with the aid of slides that will represent educational material available online on the Elly platform During classrooms examples will be proposed.

Assessment methods and criteria

The learning will be assessed by a written exam and an optional oral exam.
The written exam will consist of 30 closed-ended questions.
In the test, each correct answer in the closed questions is worth 1 point. Wrong answers are worth 0 points.
Achieving a sufficiency (18/30) in the written test is binding for taking the optional oral exam. The oral examination can improve or worsen the grade by up to 3 points.
Achieving sufficiency (18/30) after the written test and the oral test is binding for passing the exam.
Lode will be awarded in the case of reaching the maximum score in the written exam and on the ability to use the disciplinary vocabulary to the best of one's ability. It will be possible to take a written pre-test as soon as the course is over. The pre-test will be written with 35 closed questions. In the test each correct answer in the closed questions is worth 1 point. Wrong answers are worth 0 points. Lode will be awarded if >30 correct answers are achieved.
