<br />PART I: PHYSIOLOGY AND METABOLISM. Elements of Human physiology: 1) structure and functions of the gastrointestinal tract, liver and pancreas; 2) digestion and absorption of macronutrients; absorption of micronutrients; PART II: FOODS AND NUTRIENTS. Nutritional quality of foods and physical activity: 3) RDAs and guidelines for healthy eating 4) protein quality; 5) the Glycemic Index; 6) metabolic role of food supplements.
